Somerville Pain au Levain

Following Peter Reinhart’s instructions, I harvested yeast from the Somerville air and slept with the culture under my pillow every night for a month. But check out the sweet loaf! This version calls for both wild and instant yeast, I’m trying it tomorrow with only the wild. Will post results.

  1. wow- cool. i just finally “got” how to make bread, like a couple weeks ago. i had no idea there was such a thing as wild yeast. so much to learn! :)

    • I will send you some if you want :) It is somewhat high-maintenance stuff, so it does feel like learning a serious magic trick. Baking bread is satisfying in the extreme.
